[Marswell] Things You Must Know About Popcorn
23 Apr,2018
In the past, popcorn kernels would pop open into a flower-like shape, a form commonly referred to as “butterfly-shaped” or “snowflake-shaped.” However, when the kernel’s hull splits evenly upon popping, the result is spherical popcorn—also known as “mushroom-shaped.” Although mushroom-shaped popcorn generally puffs up less than butterfly-shaped varieties, its advantages of easier transportation and storage, along with its ability to coat more evenly with sugar or other seasonings, make it a popular choice for processing into a wide range of popcorn snacks. The hybrid variety that reliably produces mostly spherical popcorn only emerged in 1998.
The authors of most popcorn-related papers have received funding from various food companies, and some are even employees of these companies.
The production principle of puffed snacks and breakfast cereals is the same as that of popcorn. Many grains or pseudocereals can be puffed, but because they lack a sufficiently tough seed coat, external pressure must be applied. The traditional cannon-style puffed-rice machine is a prime example of such external-pressure technology. Buckwheat and sorghum can be puffed into butterfly-shaped puffs, but in any case, the resulting puffs are still much smaller than popcorn.
Scientists discovered popcorn more than 6,700 years ago. In 2012, archaeologists unearthed corn cobs in Peru that belonged to the popping variety of maize. It appears that people at the time ground the corn into a powder and then consumed it.
